We raise our glasses to this event and, above all, to the many small steps that led to it.<\/p>\n<p>We did not achieve the status of a sustainable winery from one day to the next. However, we were able to approach the topic with confidence, as we had already built a solid foundation of sustainability. At Schloss Johannisberg, we have been preserving the legacy of the former abbot from Fulda for a long time by continuing his brilliant project of planting the entire hill with Riesling and making it our philosophy. We know where our roots lie and proudly present them today.<br \/>\nSustainability in a regional context is embodied by the wooden barrels in which our wines mature. These 1200-liter barrels are made from oak out of our own nearby forest. A wonderful cycle when you consider that vines and wood are rooted in the same soil.<br \/>\nGentle pruning is also a sustainable measure. Introduced many years ago by our viticultural manager Michel St\u00e4dter, this type of pruning is based on the natural sap flow of the vines and can therefore ensure healthier growth.<br \/>\nWhen talking about sustainability, the term \u201cbiodiversity\u201d quickly comes up. What does this look like at Schloss Johannisberg? We have been converting to organic viticulture for several years and therefore attach great importance to the environmentally friendly cultivation of our vineyards.<\/p>\n<p>Insecticides have given way to more natural methods and our vineyards are greened all year long, giving home to bees as well as birds such as falcons. Our castle park is home to several bee colonies. Dry stone walls are another important landscape element in the vineyards. On the one hand, they fortify our vineyards and on the other hand, as a natural heat reservoir, they are the ideal habitat for wall lizards.<\/p>\n<p>As you can see, the topic of sustainability affects all areas of the winery and will never be completely exhausted.
